What the air does out here

The rackhouse at Mile 75 sleeps a thousand barrels in the dark, and the dark is better off for it. Ranks of charred oak rise to the rafters, smooth bourbon breathing through the staves, a curl of smoke off the char that never fully leaves the room. Nobody hurries in here. The whole building is an argument for standing still, and the building is winning.

Who rides with it

The man with the copper thief, sampling his way down the ranks on official business. Long-view investors who talk in years the way most people talk in weeks. Visitors who lower their voices without being asked. Part of every barrel disappears into the rafters each year, and the house books it as rent.

Pair it at the next stop

The leg's first light rolled a barrel down from Apple Maple Bourbon at Mile 72, and this is where it went. The smoke has plans of its own: it turns up respectable at Whiskey and Smoke, Mile 90, the last marker before dark.
